  • Lemon Balm Shortbread Cookies

    1 Cup of Butter
    ¾ Cup of Sugar
    1 Tsp of Vanilla
    1 Egg
    1 ½ Cups of Flour
    1 Cup of Almond Flour
    1 Tbsp of Manipura Tea, ground to a powder
    ½ Tsp of Salt

     

    In an electric mixer cream butter and sugar. Add vanilla and eggs continuing to mix until incorporated. Add the flour and almond flour. Blend. Then add the tea and salt. Blend.

    Divide the dough in half. Take a piece of parchment paper and spoon dough out into a log shape. Wrap the parchment around the dough and roll until you have a solid “log”. Continue with the second one. Put these in the freezer to firm up. Remove and slice into discs. Place parchment paper on a cookie sheet an inch or so apart.

    Bake at 375 for 18 minutes.
